Simple Guacamole Salad



Roughly chop the avocado and tomatoes.

Finely chop the red onion.

Crush the garlic clove.

Mix the ingredients above together in a bowl.

Add a squeeze of lemon juice, salt and pepper and stir together.

Serve with spinach and romaine lettuce


- 1 ripe avocado

- 3 small tomatoes

- 1/4 red onion

- 1 garlic clove

- 1 lemon

- salt and pepper


To serve:

- baby spinach

- romaine lettuce

This is a tasty and nutritious salad that can be made in minutes. Perfect for a light lunch, or for a heavier meal, serve with sweet potato wedges on the side.
