Banana Chop Chip Muffins

Method

Place all the ingredients (except for chocolate chips) in a blender or food processor and blend until combined and smooth.

(Alternatively, mash the bananas and mix with the rest of the wet ingredients. Mix together the dry ingredients and slowly add to the wet ingredients.)

Stir in the chocolate chips, leaving a few to sprinkle on top.

Pour the mixture into muffin or cake cases.

Sprinkle remaining chocolate chips on top, and cook in the oven at 180C for 20-25minutes (muffins) or 10-12 minutes (cakes).

- 5 large ripe bananas

- 1 cup maple syrup

- 1/4 cup sunflower oil

- 1 cup plant milk

- 1 cup rice flour

- 3/4 cup tapioca flour

- 1/2 cup buckwheat flour

- 2 tbsp ground flax seeds

- 2 tsp baking powder

- 1/2 tsp baking soda

- 1 tsp xanthan gum

- 1/2 tsp mixed spice

- 1/2 tsp sea salt

- 1/2 cup dark chocolate chips
