Banana Flapjacks

Method

Mash the bananas and place in a saucepan.

Add the maple syrup, nut butter and coconut oil, and heat gently until everything is melted and combined.

Mix in the oats until they are fully combined with the liquid.

Line a baking tray with baking paper, and spread the flapjack mix evenly over the tray, pressing the mixture down firmly.

Bake at 200C for 15-20 minutes.

Ingredients


- 3 medium bananas

- 6 tbsp maple syrup

- 6 tbsp nut butter

- 4 tbsp coconut oil

- 3 1/2 cups oats

 

Optional extras (choose one)

- 1/2 cup raisins

- 1/2 cup dark chocolate chips

- 1/2 cup chopped nuts

- 1/2 cup mixed seeds

 

These banana flapjacks are easy to make, and a great way of using up those quickly ripening bananas! Perfect as a snack, or even for breakfast with some fresh fruit or a smoothie.
