Chickpea Blondies

Method

Place all the ingredients (except for chocolate chips) in a blender or food processor and blend until combined and smooth.

Stir in the chocolate chips, leaving a few to sprinkle on top.

Pour the mixture into a lined baking dish approx 20x20cm.

Sprinkle remaining chocolate chips on top, and cook in the oven at 180C for 20-25minutes.

Ingredients


- 1 can chickpeas

- 1/4 cup almond milk

- 1/2 tbsp apple cider vinegar

- 1/3 cup nut butter

- 1/4 cup maple syrup

- 1/4 cup coconut sugar

- 3/4 cup ground almonds

- 4 tbsp ground flax seeds

- 3/4 tsp baking powder

- 1/4 tsp baking soda

- 1/4 tsp sea salt

- 1/2 cup dark chocolate chips

These blondies are soft, yummy and filling, and also make a great healthy protein snack. Just be careful not to eat the whole lot in one go!
